Pop's Smash Burger

The perfect summer smash burger paired with fancy sauce and smoked cheddar cheese.

Ingredients

  • 4 potato buns 
  • 640g 70/30 C.A.B ground beef, rolled into 80g balls 
  • 8 slices smoked cheddar cheese 
  • 1 sweet onion, diced 
  • Diamond kosher salt 

Fancy Sauce Relish 
  • 225g Dukes Mayonnaise 
  • 25g Heinz Ketchup 
  • 30g sweet pickles chips, chopped 
  • 10g Bertmans mustard 
  • 2g Maggi Seasoning 
  • 2g Pimenton de la vera (sweet smoked paprika)


Cooking

  1. Combine all fancy sauce ingredients in a bowl and mix until fully incorporated, reserve in the refrigerator.
  2. Heat up your griddle/cast iron pan, until just before smoking, then brush with some cooking oil. 
  3. Working in batches, place 2 burger balls on your griddle and season generously with salt, lay a piece of patty paper over each ball and forcefully smash down burger balls into thin, lacy patties. 
  4. Cook patties for 2-3 minutes or until visible crispness around the outsides, then using your palette knife, scrape patty off griddle and flip, proceed to top with chopped onions and smoked cheddar cheese, then stack your patties. 
  5. WARM YOUR BUNS. Place your top bun on top of your patties followed by bottom bun and let steam while your patties finish cooking, about 1 minute. Then remove bottom bun and slather with fancy relish, add more pickles if desired and top with stacked burger patties and top bun.


SAFE HANDLING TIPS: 

  • Wash hands with soap and water before cooking and always after touching raw meat. 
  • Separate raw meat from other foods. 
  • Wash all cutting boards, utensils, and dishes after touching raw meat. 
  • Do not reuse marinades used on raw foods. 
  • Wash all produce prior to use. 
  • Cook steaks and roasts until temperature reaches 145°F for medium rare, as measured by a meat thermometer, allowing to rest for three minutes. 
  • Cook Ground Beef to 160°F as measured by a meat thermometer. 
  • Refrigerate leftovers promptly.
