Upside Down Beef and Potato Pie

Beef and potatoes with a twist.

Prep Time: 15 minutes    Cook Time: 1 hour 15 minutes     Total Time: 1 hour 30 minutes    Total Servings: 4



Ingredients

  • 1 lb. beef sirloin steaks, cut 1/8 to 1/4 inch thick 
  • 1 chopped medium onion 
  • 2 tbsp. vegetable oil 
  • 3/4 cup BBQ sauce 
  • 2-3 sprigs of thyme (or rosemary, or any other herb and spice one likes)  
  • 4 medium potatoes 
  • Salt and pepper to taste


Cooking

  1. Stack beef steaks; cut lengthwise in half, then crosswise into 1-inch wide strips. 
  2. Heat 1 teaspoon of oil in a large nonstick skillet over medium-high heat until hot—sauté onion for a minute or two. 
  3. Add beef; sauté for 1 to 3 minutes.  
  4. Add BBQ sauce and continue cooking until slightly thick. Remove the mixture from heat and keep warm. 
  5. Thinly slice potatoes and coat them with 1 tablespoon of oil and season to taste. 
  6. Line an oven-safe skillet or baking dish with parchment paper, add beef mixture then layer potatoes on top. 
  7. Cover with foil and bake for 1 hour at 400F or until potatoes are tender. Remove foil and continue to bake for 10 minutes or until potatoes are a crispy golden brown. 
  8. Let it cool slightly before turning onto a plate. Cut and serve.


Notes: 

  • You can utilize leftover steak or roast in this dish.


SAFE HANDLING TIPS: 

  • Wash hands with soap and water before cooking and always after touching raw meat. 
  • Separate raw meat from other foods. 
  • Wash all cutting boards, utensils, and dishes after touching raw meat. 
  • Do not reuse marinades used on raw foods. 
  • Wash all produce prior to use. 
  • Cook steaks and roasts until temperature reaches 145°F for medium rare, as measured by a meat thermometer, allowing to rest for three minutes. 
  • Cook Ground Beef to 160°F as measured by a meat thermometer. 
  • Refrigerate leftovers promptly.
